El objetivo de este artículo es ofrecer un amplio panorama bibliográfico sobre la gastronomía boliviana desde diferentes ángulos e intereses durante el siglo XIX y XX. Veremos trabajos desde la historia, numerosos e importantes catálogos de productos bolivianos y su situación crítica en muchos casos, y también señalaremos aquellos trabajos publicados desde los organismos del Estado (de muy buena calidad y de gran utilidad para el público) y, finalmente, hablaremos de los productos bibliográficos que se publican desde la iniciativa privada y las ONG.2.

The objective of this article is to offer an overview of what has been published in the country, from different angles and interests, the history of gastronomy in the twentieth and twenty-first centuries, books on history, numerous catalogs of Bolivian products and their critical situation in many cases, works carried out from
State agencies, of very good quality and great utility for the public. As well as from the private initiative, from institutions and NGO. The problem of a large part of these publications, as in other fields, is the lack of circulation, which means that much of the effort do not reaches to the public. Especially the youngest, who given the phenomenal growth of gastronomy in the world, is interested in dedicating his time to these activities.
