Este artículo se constituye en un avance de la investigación de la tesis doctoral El patrimonio gastronómico como sistema vivo. Un abordaje desde la complejidad, del programa de Investigación Transdisciplinar en Humanidades de la Facultad de Humanidades y Ciencias de la Educación de la Universidad Mayor de San Andrés. Uno de los aspectos relevantes de este estudio se enfocó en determinar las estrategias de patrimonializarían de los recursos alimentarios en el país desde diferentes ámbitos y miradas, determinando que se puede hablar de redes de patrimonialización y, aunque las mismas no han sido planificadas de forma consciente, las articulaciones entre diferentes actores y sus intereses apuntan a reconocer, revalorizar y generar estrategias de aprovechamiento de estos recursos tan importantes.

This work is an advance of the doctoral thesis research Gastronomic heritage as a living system. An approach from the complexity of the Transdisciplinary Research Program in Humanities of the Faculty of Humanities and Educational Sciences of the Universidad Mayor de San Andrés. One of the relevant aspects of this study focused on determining the strategies for the patrimonialization of food resources in the country, from different areas and perspectives, etermining that we can speak of patrimonialization networks and, although they have not been consciously planned, the articulations between different actors and their interests aim to recognize, revalue and generate strategies to take advantage of these important resources.
